Pinto Beans and Spinach

4 T. Oil
½ Onion (diced)
¾ c. Fresh Spinach
2-3 c. whole cooked Pinto Beans without liquid (recipe in this book)
Salt and Pepper to taste

Pinto Beans with Spinach
On medium heat, fry pinto beans in oil for about five minutes, stirring occasionally. Add salt and pepper. Add onions and one more T. oil. Fry until onions are translucent. Add spinach and fry for about 3 more minutes.

This was considered a Lenten food for Catholic New Mexicans. Since we cannot eat meat on Friday’s during the Lenten season, this was a good source of protein.
